Collagen Fruit Jellies (Print Version)

Bouncy, fruity gelatin bites enriched with collagen peptides for a nourishing, naturally sweetened treat.

# What You Need:

→ Fruit Jelly Base

01 - 2 cups 100% fruit juice (orange, apple, berry, or a combination)
02 - 1 to 2 tablespoons honey or maple syrup, adjusted to taste
03 - 3 tablespoons grass-fed collagen peptides (about 30 g)
04 - 3 tablespoons unflavored gelatin powder (about 30 g)
05 - 1 tablespoon freshly squeezed lemon juice

→ Optional Add-ins

06 - 1/2 cup small diced fresh fruit such as berries, kiwi, or mango (about 75 g)

# How-To Steps:

01 - Pour 1/2 cup of the fruit juice into a medium saucepan. Sprinkle the gelatin powder evenly over the surface and let it rest for 5 minutes until the mixture thickens slightly and the gelatin absorbs the liquid.
02 - Place the saucepan over low heat and stir constantly until the gelatin dissolves completely. Do not allow the mixture to boil, as high heat can weaken the gelling power.
03 - Remove the saucepan from heat. Pour in the remaining fruit juice, collagen peptides, honey or maple syrup if using, and lemon juice. Whisk thoroughly until the collagen is fully dissolved and the liquid is smooth and uniform.
04 - If using diced fresh fruit, gently fold the pieces into the mixture until evenly distributed.
05 - Transfer the mixture into silicone molds or pour it into an 8x8-inch baking dish lined with parchment paper.
06 - Refrigerate for at least 2 hours or until the jellies are fully firm and hold their shape.
07 - If using a baking dish, cut the set jelly into uniform cubes. Pop individual jellies out of silicone molds and serve immediately.

# Expert Tips:

01 -
  • They taste like candy but secretly deliver a solid dose of collagen in every bite, which feels like getting away with something clever.
  • You can switch up the juice and fruit every time you make them, so they never get boring and always match whatever you are craving.
02 -
  • If the gelatin does not bloom properly before heating, your jellies may end up grainy or fail to set, so give those five minutes their full due.
  • Collagen peptides dissolve best when the liquid is warm but not hot, which is why you add them after removing the pan from heat.
03 -
  • Spray your silicone molds with the faintest mist of neutral oil before pouring in the jelly mixture and every single piece will release flawlessly.
  • If you want clearer, more transparent jellies, let the mixture settle for two minutes after whisking so air bubbles can rise to the surface before pouring.
