Garlic Butter Steak Bites (Print Version)

Tender steak cubes and mushrooms sautéed in fragrant garlic butter for a quick, savory dish.

# What You Need:

→ Steak & Marinade

01 - 1 lb sirloin steak, cut into 1-inch cubes
02 - 1 tbsp olive oil
03 - 1/2 tsp salt
04 - 1/2 tsp freshly ground black pepper
05 - 1/2 tsp smoked paprika (optional)

→ Mushrooms

06 - 8 oz cremini or white mushrooms, quartered
07 - 1 tbsp olive oil
08 - 1/4 tsp salt
09 - 1/4 tsp black pepper

→ Garlic Butter

10 - 3 tbsp unsalted butter
11 - 4 cloves garlic, minced
12 - 1 tbsp fresh parsley, chopped (plus extra for garnish)
13 - 1 tsp fresh thyme leaves (optional)

# How-To Steps:

01 - Toss the steak cubes in a bowl with 1 tbsp olive oil, salt, pepper, and smoked paprika (if using). Let sit at room temperature while you prepare the mushrooms.
02 - Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add the mushrooms, season with salt and pepper, and cook for 4–5 minutes until golden and tender. Remove mushrooms from the skillet and set aside.
03 - Increase the heat to high. Add the steak cubes in a single layer (do this in batches if necessary). Sear for 1–2 minutes per side until browned but still medium-rare inside. Transfer steak to a plate; do not overcrowd the pan.
04 - Lower the heat to medium. Add butter to the skillet. Once melted, add minced garlic and sauté for 30 seconds until fragrant.
05 - Return the steak bites and mushrooms to the skillet. Toss with the garlic butter and fresh herbs for 1–2 minutes until everything is well coated and heated through. Transfer to a serving platter, garnish with extra parsley, and serve immediately.

# Expert Tips:

01 -
  • This dish comes together in under 30 minutes but tastes like it took all evening
  • The garlic butter sauce creates that luxurious steakhouse flavor at home
  • Everything cooks in one pan so cleanup is practically nonexistent
02 -
  • Crowding the pan while cooking the steak will cause it to steam instead of sear, so work in batches if needed
  • Letting the steak rest at room temperature for even 15 minutes helps it cook more evenly
  • The garlic burns quickly once the butter is hot, so have everything else ready before adding it
03 -
  • Pat the steak cubes completely dry before seasoning to get the best sear
  • Add a splash of white wine after cooking the steak to deglaze the pan and add depth
  • These reheat beautifully in a skillet over medium heat for about 3 minutes
