01 - Toss the steak cubes in a bowl with 1 tbsp olive oil, salt, pepper, and smoked paprika (if using). Let sit at room temperature while you prepare the mushrooms.
02 - Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add the mushrooms, season with salt and pepper, and cook for 4–5 minutes until golden and tender. Remove mushrooms from the skillet and set aside.
03 - Increase the heat to high. Add the steak cubes in a single layer (do this in batches if necessary). Sear for 1–2 minutes per side until browned but still medium-rare inside. Transfer steak to a plate; do not overcrowd the pan.
04 - Lower the heat to medium. Add butter to the skillet. Once melted, add minced garlic and sauté for 30 seconds until fragrant.
05 - Return the steak bites and mushrooms to the skillet. Toss with the garlic butter and fresh herbs for 1–2 minutes until everything is well coated and heated through. Transfer to a serving platter, garnish with extra parsley, and serve immediately.
