# What You Need:

→ Fruit Base

01 - 1 ½ cups fresh strawberries, hulled and halved
02 - 2-3 tablespoons honey or maple syrup
03 - 2 tablespoons freshly squeezed lemon juice

→ Gelatin Mixture

04 - 3 tablespoons unflavored gelatin powder
05 - ½ cup cold water

# How-To Steps:

01 - Place hulled strawberries and lemon juice in blender or food processor. Blend until completely smooth, ensuring no fruit chunks remain.
02 - Transfer puree to small saucepan. Add honey or maple syrup and stir thoroughly to incorporate.
03 - Sprinkle gelatin powder over cold water in separate small bowl. Let stand for 3-5 minutes until mixture thickens and absorbs liquid completely.
04 - Heat strawberry mixture over medium-low heat for 2-3 minutes until just warm throughout. Avoid boiling to preserve gelatin's setting properties.
05 - Add bloomed gelatin to warm strawberry mixture. Whisk continuously for approximately 2 minutes until gelatin completely dissolves and mixture appears smooth.
06 - Remove from heat. Carefully transfer mixture to silicone gummy molds or parchment-lined small baking dish. Refrigerate for minimum 2 hours until fully set.
07 - Remove gummies from molds or cut into bite-size pieces if using baking dish. Store in airtight container in refrigerator for up to 1 week.
